i’m all about baggy pants and history right now.

simple(ish) frittata for one.

.. 1/4 cup butternut squash, cubed

.. 1/4 cup sweet potato, cubed

.. 1/4 cup broccoli, chopped small

.. 1/4 cup onion, thinly sliced

.. 1/4 cup leeks, julienned

.. 1 garlic clove, minced

.. minced ginger, to taste (i personally go crazy with the ginger)

.. 2/3 leves of kale, julienned

.. coconut oil, for cooking

.. salt, pepper, cumin, turmeric, cinnamon (yes), to taste

.. 4 eggs

1. turn oven on to 400˚F–>heat a pan on high–>add coconut oil–>add squash, sweet potato, broccoli, onion, leek, garlic, ginger, and spices.

2. sautée ingredients for 1-2 minutes–>turn heat down to medium/low–>cover until all ingredients are almost completely cooked through, 5 or so minutes, stirring periodically.

3. while that is covered, whip up the eggs adding more salt and pepper to the egg mixture.

4. add eggs and chopped kale to the pan and lightly mix–>transfer to oven and leave until cooked through.

5. et voilà! frittata!
